Flounder Stuffed with Spinach and Goat Cheese

Ingredients
- 1 lb flounder fillets
- 10 oz spinach
- 4 oz goat cheese
- 1 cl garlic
- 1/4 C onion, chopped
- 1 T Parmigiano, grated
- 1/8 t nutmeg, ground
- 1 T paprika
- 1 T oregano
Instructions
- Saute the onion and garlic until softened, then add the spinach and continue until the spinach is wilted. Remove from the pan, mix in the Parmigiano and nutmeg, and season to taste.
- Season the fish, then roll each fillet around an appropriate amount of spinach mixture, securing the ends together with skewers.
- Drizzle the fish with olive oil, then bake at 400 until the fish flakes easily with a fork.
- Plate and serve.
